  • For 4 people :
  • 3 new carrots
  • 3 thin slices of celery root
  • 1 quart of cucumber
  • 25 g Chinese vermicelli
  • 150 g shelled shrimp
  • 2 eggs
  • 8 sprigs chives chopped
  • the juice of 1 half lemon.
  • For the sauce: 1 tbsp. tablespoon of peanut oil or sesame oil
  • 2 tbsp. cider vinegar
  • 3 c. soup of soy sauce
  • 1 C. sugar coffee
  • salt
  • pepper.


Soak 5 minutes vermicelli in boiling water. Drain and refresh under cold water. In a lightly oiled pan, cook the beaten eggs with half the chopped chives and a pinch of salt and pepper. Cut the omelet into strips and let cool. Meanwhile, prepare the sauce then wash and peel the vegetables. Cut them into sticks and remove the cucumber seeds. In a salad bowl, mix the vermicelli and vegetables with the sauce and lemon juice. Sprinkle with omelet strips, shelled shrimp and chopped chives. Serve.
